Txakoli Doniene HO-BE

Doniene Gorrondona Txakolina today has 15 hectares. in production, preferably in ownership. All vineyards are located on the south-facing slopes of the Bakio Valley. Bakio, due to its geographical location, on the Cantabrian coast but protected by the mountains from the northwest winds, has historically been a vineyard growing area. The soil, sandier in the highest areas and more clay in the lower parts of the valley, has a diversity to which the native varieties are adapted.

MEANING OF HO-BE

HO-BE’s name is a play on words. They are the first syllables of the name composed of the grape variety that is the absolute protagonist in this wine: HOndarrabi BEltza. At the same time, HOBE means BEST in Basque. This wine is the result of his honest ambition to deepen his knowledge of this unique variety, its skills in the field and the winery.

VINEYARD

Selected harvest in the Aldape vineyard. Plot of 0.9 hectares planted in 2012 through mass selection. Hondarrabi beltza*. Plot with ophite bedrock from the Triassic period, the sandy-clay loam soil loses depth towards the descending part, where the limiting horizon is more evident with levels higher than 40% clay. This soil limitation has a positive influence on the vine: its vigor is more contained, the soil-plant-yield balance is reached at an early age and facilitates good and uniform maturity of the grapes. The grapes for the production of HO.BE are harvested in this lower part of the vineyard.

ELABORATION

Oriented towards the scope of the expression of soils and variety. Destemming and brief cold maceration. Fermentation with own yeasts identified in their vineyards, devatting at the end of the FA and gentle pressing. Spontaneous malolactic. Refining in large French oak barrels for 4 months and subsequent stay in a stainless steel tank. Bottled in September 2021. Minimal use of sulfur.

TASTING NOTES

The Txakoli Doniene HO-BE is a medium-layered ruby color. Aromas of wet earth, dry orchard, dry grass, reminiscent of red fruit and plum. In the mouth with good acidity and volume, nettle and dried herbs. The ripe tannin leaves final sensations of chocolate and ink in the mouth, without ceasing to be a fresh wine.

Recommended consumption: From the year of its launch (2023) to 2028*. The wine evolves favorably in the bottle.

Service temperature: 16-18º C.

PAIRING
Ideal companion for seafood, crustaceans and oily fish, as well as grilled fish, rice and white meats.
