Txakoli Gaztelugatxe
The winery is newly built, very well designed, and contains stainless steel tanks with a capacity for 14,000 liters of white, rosé and red txakoli, as well as another 5,000 liters for Gaztelugatxe txakoli.
As it is a family winery, the elaboration of txakoli is more personalized and careful, that is, more artisan, since, on the one hand, the maturation times of each grape variety are controlled separately in the vineyards, to later select the proportions with which the different varieties are going to be mixed in order to carry out different types of fermentation with each mixture, which results in one or another txakoli, each with its specific blend and aromas.
The Zabala Txakolina winery is surrounded by 3 hectares of vineyards planted on gentle slopes facing south, and is located in a beautiful landscape made up of gentle hills of clayey and well-drained soil. They grow Hondarrabi Zuri, Riesling and Hondarrabi Beltza grapes. A second zone of Hondarrabi Beltza vineyards with more than 100 years old are located around the old winery of the Basigo farmhouse.
ELABORATION
Txakoli Gaztelugatxe is aged for 6 months, with more body, more structure, fatter and with a slightly bitter background.
Made from production chosen for this special product, from its vineyards in Bakio. The vineyards are located in an area with gentle slopes facing south and integrated production techniques are used in their care, for better management and respect for the environment. They have combined grapes from a hundred-year-old vineyard and a young vineyard of the Hondarrabi Zuri variety and 10% Riesling.
After the alcoholic fermentation, it has matured for 7 months with the lees in the tank to obtain a txakoli with different characteristics and, on the other hand, more durable and that improves with aging in the bottle.
Bottled at its best moment it can have a life for several years, thus breaking with the cliché that txakoli is a wine of the year.
TASTING NOTES
The Gaztelugatxe txakoli is pale straw yellow in color, elegant with an aroma of stone fruit, floral and a slight touch of lees, notes of apple, freshly cut grass, fresh, clean. On the palate it is a round and fresh txakoli, with a certain volume and a pleasant long finish, with that touch of lemony acidity. The Gaztelugatxe txakoli is the winery’s most complex wine, aged on the lees that is only released on the market in exceptional vintages. Consumption temperature 10-12ºC.
