Txakoli Urdaibai is made with Hondarribi Zuri in the Urdaibai Biosphere Reserve, exactly in the municipality of Arratzu.
The vineyards are located in the Bizkaino town of Arratzu, a small and old enclave of the Urdaibai reserve, at the foot of Mount Oiz and watered by the Gola river. The terrain of the vineyard is calcareous clay.
The elaboration begins with the ecological agriculture that the vineyards enjoy, going to a traditional elaboration process on its lees.
Txakoli Urdaibai 2019 is alive, electric, with a very well integrated acidity and a strength that made it herald a year in which it will give a lot to talk about and for the better.
Pale yellow color with greenish trim, clean, bright. Medium high aromatic intensity. Shaking the glass, fresh and clean notes of white fruits (green apples), freshly cut grass and aromatic come out. It gives off an aroma of freshness and cleanliness, floral notes, hints of daisies and small notes of aging on the lees. On the nose, the aromatic force that surrounds it draws attention. In the mouth, a light entry, with a touch of bitterness. A long finish, with notes of lemon, but with a non-aggressive acidity.
Rice, blood sausage, txistorra, spiced products, fatty fish such as grouper, sea bass, fatty cheeses, such as idiazábal. White meats with sweet touches.
Varieties: Mostly Hondarribi Zuri, with contributions of a little Mune Mahatsa (folle blanche).
