Txakoli Sorkin
ELABORATION
The manual harvest is carried out with 10kg boxes. Meticulous selection of grapes in the vineyard, making several passes to obtain the optimum point of ripeness. Fermentation with indigenous yeasts multiplied from pie de cuba. Destemming, pressing and static racking by gravity and cold for 36 hours. Fermentation at low temperature in stainless steel tank. Aged on fine lees without battonage for 5 months. Natural wine, without filtering or clarifying, very lightly sulphited on the lees (12mg/l of total sulfur dioxide).
TASTING NOTES
The Txakoli Sorkin is pale straw yellow in color with greenish reflections and brilliant. On the nose it offers medium intensity, lemon, green apple, with a mineral background. Memories of chalk, floral, with a herbaceous point. On the palate it is fresh, lively, citric, light-bodied with a floral finish of medium persistence.
