Framing within the Txakoli de Álava Protected Designation of Origin, the uniqueness of the cultivated vineyard and the production technology used achieve wines of marked personality and excellent quality. Astobiza wines are made exclusively with grapes produced in this vineyard, with a closed exploitation development, that is, with a winery only dimensioned to produce the vintage produced in its own vineyard. Therefore, its production is considered as Payment or Farm Wines, where the characteristics of the viticultural ecosystem are reflected in the wines produced.
Located in the small rural municipality of Oquendo, in the province of Álava, about 30 minutes from Bilbao, on a 10-hectare farm divided into 7 micro-plots. Located 250 meters above sea level, it is protected by mountains and far from the bottom of the valley, thus protecting itself from the fog and winter frosts, so damaging. 100% of our grapes are indigenous varieties, mainly Hondarrabi Zuri, some Hondarrabi Zuri Zerratie (Petit Corbu) and a small plot of Izkiriota known as Gros Manseng.
Hand picking into small crates, manual selec- tion in vineyard and cellar, stemming soft pressing, static must racking, fermentation under controlled temperature, inerting, stabilization and microfiltering process.
Clean and bright. Straw yellow colour with shades of green. Strong varietal aromas, with overtones of white fruit (pear and apple), citrus fruit (grape- fruit) together with characteristic vegetal and herbaceous hints (fennel). Fresh in mouth, balanced, persistent aromatic finish, with varietal overto- nes, well structured.
SERVICE AND PAIRING
Serve chilled in a glass, at around 6o – 8o, perfect for pairing with light rice dishes and char-grilled fish. Ideal cheeses for long after-dinner pairings included Edam and Gouda. Also for Sushi, Smoked Salmon, Clam Chow- der and Gentleman’s Relish (patum peperium).
