Txakoli Parcela 3 – Hiruzta
Parcela No 3 is a vintage txakoli that reflects the character of our farm. It is born from a very special plot, Plot Number 3. The indigenous Hondarrabi Zuri grape, grown in the property’s vineyards, is the protagonist of this plot in which the uniqueness of the Atlantic climate takes on all its meaning. This wine takes its name from this plot that represents the essence of the HIRUZTA project. HIRU, 3 in Basque and UZTA which means harvest. HIRUren UZTA, HARVEST OF THREE. The dream of a father and his two sons, the Rekalde family, which is now a reality. There are also three years that he has been growing up on his lees. The sum of these factors marks the personality of this unique txakoli.
Own 17 has. located around the winery on the foot of Mount Jaizkibel. Its orientation towards noon protects it from the wind and humidity of the nearby Cantabrian Sea, allowing it to enjoy excellent sunshine. Vineyard cultivated on a trellis with the double Guyot pruning system. Plantation frame: 2.60 x 1.20 (3,200 vines / hectare). Soil with a lot of bedrock and clay marl.
Harvest selection in vineyard plot number 3 in Hondarrabi Zuri with the best ripening conditions and collection in small capacity boxes. Shelling and crushing followed by gentle pressing. Static cold racking at 8o / 10oC. Fermentation at a controlled temperature between 16o and 18oC. Aging on lees in tank for three years, maturing slowly until bottling, without clarification or stabilization.
As a result of this tank aging process, the wine shows its purity and integrity, which is reflected in its great intensity and aromatic complexity, appreciating many notes of white fruit jams such as apple, citrus fruits such as grapefruit and orange, dried apricots. .., certain notes of kerosene and spices are also appreciated. The power in the mouth, its structure and length stand out. Magnificent evolution in the bottle, with a reductive aging typical of a great wine.
Due to its complexity and power in the mouth, it is a wine that can accompany both grilled fish dishes as well as fish stews and also not very seasoned meat. Excellent with cured cheeses. Serving temperature: 8o to 10oC. Store in a cool place, in the absence of lighting and in a place free from foreign odors. Good evolution in the bottle for the next three to four years.
