Malkoa is a special Txakoli , called farm or payment; Authentic, genuine and with a much longer bottle life than what has been produced so far.
Framing within the Txakoli de Álava Protected Designation of Origin, the uniqueness of the cultivated vineyard and the production technology used achieve wines of marked personality and excellent quality. Astobiza wines are made exclusively with grapes produced in this vineyard, with a closed exploitation development, that is, with a winery only dimensioned to produce the vintage produced in its own vineyard. Therefore, its production is considered as Payment or Farm Wines, where the characteristics of the viticultural ecosystem are reflected in the wines produced.
Located in the small rural municipality of Oquendo, in the province of Álava, about 30 minutes from Bilbao, on a 10-hectare farm divided into 7 micro-plots. Located 250 meters above sea level, it is protected by mountains and far from the bottom of the valley, thus protecting itself from the fog and winter frosts, so damaging. 100% of our grapes are indigenous varieties, mainly Hondarrabi Zuri, some Hondarrabi Zuri Zerratie (Petit Corbu) and a small plot of Izkiriota known as Gros Manseng.
Made with very ripe Hondarrabi Zuri grapes from a plot of our own vineyard and cultivated with an integrated production viticulture, respectful with the environment. This txakolí remained for 20 months in an ovoid concrete tank, where its lees (yeasts) move continuously spontaneously within a space without edges and with the help of the daily thermal oscillation between day and night. During this time, the wine self-stabilizes and gains volume in the mouth, integrating the rest of the components, then going to the bottle with a reducing aging, which completes its refining.
Malkoa shows great complexity, highlighting spicy and balsamic aromas, with dominant citrus tones (grapefruit) and aromatic fresh herbs. Of marked Atlantic character, it is endowed with a very long, fresh, powerful and structured mouth, being able to live many years in the bottle.
SERVICE AND PAIRING
Serve in a wide glass, at a temperature of 10º C. We suggest tasting it with raw seafood such as sea urchins, oysters, tuna tartare, caviar … or undercooked seafood such as barnacles, scallops, red prawns or red prawns and also with Fine grilled turbot, king, sea bream, nape of hake or octopus.
