It has an optimal life in the bottle of more than 10 years after it goes on the market, which occurs five years after the harvest.

ELABORATION
Made with native, well-ripe Ondarrabi Zuri grapes, with a selection of bunches at the table, destemming and maceration with skins, soft pressing and alcoholic fermentation at controlled temperatures. Made at the prestigious Astobiza winery, by Ana Martín and Pepe Hidalgo.

AGING IN THE CELLAR
This wine remains for 2 years in ovoid concrete tanks, where its lees move continuously naturally within a space without edges. During this time, the wine stabilizes itself and gains volume and intensity in the mouth, integrating all the components. Then it is aged for 4 months in 600 liter French oak barrels. and 400 liters. of capacity, then going on to a burgundy bottle with a reduction aging of 2 years, which completes its refinement.

PARCEL
The Mastondo Plot is from before 1996, at an altitude of 260 m. oriented to the Sun, with a planting frame of 2.5m from the street and 1.5m between plants, giving a density of 3,000 plants per ha. The soil is calcareous clay with a certain proportion of sand, the vines are all of the Ondarrabi Zuri variety and the conduction is trellised with Double Guyot pruning,

VINEYARD
Planted in 1996, surrounding the winery, at an average altitude of 250 meters, oriented to the South, with maximum insolation, on the southern slope of Mount Ganekogorta, above the municipality of Okondo. North of Álava.

VITICULTURE
Vineyard cultivated with an integrated production viticulture, respectful of the environment, sustainable, with vegetation cover, minimizing treatments, and taking into account the ecosystem where it is located.

VINTAGE
First days of October, selected by hand, first thing in the morning, in small boxes of 7 kg. capacity. And rest in a cold room.

TASTING NOTES
Malkoa private collection shows great complexity, highlighting delicious spicy and balsamic aromas, with dominant citrus tones, mineral, saline, fresh and aromatic herbs. With a marked Atlantic character, it is endowed with a very long, fresh, voluminous, powerful and structured mouthfeel. Silky and friendly texture, and long finish.

PEARING
We recommend consuming it from the fifth year, being optimal towards the year +7 and later years. Serve it in a Zalto Burgundy glass, or similar, at a temperature of 10º C. We suggest tasting it with raw seafood such as sea urchins, oysters, tuna tartare, caviar… or undercooked seafood such as barnacles, scallops, red prawns or scarlet shrimp and also with fine grilled turbot, king, sea bream, hake neck or octopus.
