Txakoli IZAKI
VINEYARD
4.0 hectares in the area “Los Atravesados” in the Castillo La Piedra area, 200 meters above sea level, facing south and with an average gradient of 25%. Poor sandy-loam soils.
Plantation with open lyre formation, aimed at obtaining small bunches of complete and homogeneous maturity, with yields around 5000 kg / Ha. Intense manual work in order to preserve a good sanitary state without applying systemic treatments.
100% Hondarrabi Zerratia (Petit Courbu)
ELABORATION
A selection has been made from its 20-year-old vineyard, from the poorest stands and, with a slight pressing, only the flower must ferments spontaneously in selected used barrels. IZAKI remained in oak barrels (previously used in SO France) for a year between alcoholic and malolactic fermentation as well as its aging on lees (without batonnage).
TASTING NOTES
It is a very balanced, friendly and complex wine, where the ripe vegetable sensations are integrated together with a smooth evolution on the lees. In the mouth it is wide and savory. A good evolution in the bottle is sensed in the coming years.
