The Winery – Makatzak Wild Wine
This txakoli is produced by Makatzak Wild Wine, an innovative winery in the Basque Country that cultivates small vineyards with a sustainable and artisanal approach. Its philosophy is based on the recovery of local varieties, minimal intervention in the winery, and the authentic expression of the Cantabrian coast terroir. Harri ta Zur perfectly reflects this vision: a wine with a unique identity, born between sea and mountains.

Winemaking
Harri ta Zur txakoli is made with a careful selection of ungrafted Hondarrabi Zuri (90%) and Hondarrabi Zuri Zerratia (10%), from a 3-hectare vineyard located in Andartza (Aia, Gipuzkoa). This vineyard sits on shallow, clay-loam soils with a mineral subsoil of calcareous slate, cultivated on steep terraces at an altitude of 300 meters and facing south.

The harvest is carried out manually. After destemming and pressing, the must undergoes static gravity and cold settling for 36 hours. Fermentation begins with native yeasts at low temperatures in stainless steel tanks and concludes in 225-liter French oak barrels. Malolactic fermentation occurs spontaneously. The wine ages for 10 months on fine lees with battonage in second- and third-use barrels, then refines for 12 months in the bottle before being released.

TASTING NOTES
Bright straw yellow with greenish reflections. Clean and luminous, it denotes youth and freshness, with a thin, elegant tear. Intense and complex aromas, highlighted by white fruits (pear, green apple), ripe citrus fruits, and light floral touches. Mineral notes and hints of fresh herbs are perceived, all wrapped in the subtle contribution of French oak, which provides toasted and fine bakery nuances. Broad and full-bodied entry, marked by vibrant, well-integrated acidity. The mid-palate is unctuous thanks to the aging process on the lees, with a silky texture and a perfect balance of Atlantic freshness and complexity. The finish is long, persistent, and mineral, inviting continued drinking.
