After a manual harvest selection at the end of September, it is fermented in stainless steel tanks, with a temperature control at 14ºC, for careful alcoholic fermentation, keeping the endogenous carbon dioxide of natural origin in solution and allowing the preservation of the aromatic percussionists. Subsequently, it is aged on its own lees for 5 to 10 months. a txakoli is obtained with the mixture of traditional mastery and more innovative technologies.
Pale yellow with greenish reflections. In the glass it is bright and clean. Presence of very fine bubbles due to the low temperature production process. Combination of clean aromas with herbaceous notes. The aroma of white fruit such as green apple stands out and presents a background of lemon citrus. Explosion of freshness and intensity.
