Txakoli GAINTZA
Gaintza Txakolina is a traditional and authentic wine. It has a light alcohol content with balanced acidity and great expression. This wine comes from the best vineyards in the region, the most expressive of the winery and with an unmistakable personality. The philosophy of the winery is to bet on sustainable agriculture, being respectful of its legacy. They make the wines with grapes from plots worked and cultivated with integrated production viticulture.

ELABORATION
After a manual harvest selection at the end of September, it is fermented in stainless steel tanks, with a temperature control at 14ºC, for careful alcoholic fermentation, keeping the endogenous carbon dioxide of natural origin in solution and allowing the preservation of the aromatic percussionists. Subsequently, it is aged on its own lees for 5 to 10 months. a txakoli is obtained with the mixture of traditional mastery and more innovative technologies.
TASTING NOTE
Pale yellow with greenish reflections. In the glass it is bright and clean. Presence of very fine bubbles due to the low temperature production process. Combination of clean aromas with herbaceous notes. The aroma of white fruit such as green apple stands out and presents a background of lemon citrus. Explosion of freshness and intensity. Light bubble tip and highly integrated acidity. On the palate it is pleasant, providing a fresh sensation with citrus notes. It is a traditional and authentic wine. PAIRING
It is a social wine, its simplicity and originality appeals to all palates, experts or not. Starting from a Michelin star restaurant, to an inviting garden with pool and barbecue. We recommend serving it at a temperature of 8º to 10ºC. Ideal to accompany appetizers, hors d’oeuvres, seafood, fish, white meat, grilled vegetables or Japanese food.
