Txakoli Doniene
Doniene Gorrondona Txakoli Winery currently has 15 hectares. in production, preferably owned. All the vineyards are located on the south-facing slopes of the Bakio Valley. Bakio, due to its geographical location, on the Cantabrian coast but protected by the mountains from the northwest winds, has historically been a vineyard growing area. The soil, sandier in the higher areas and more clayey in the lower parts of the valley, has a diversity to which the autochthonous varieties are adapted.
VINEYARD
Harvest selected in the oldest vineyards and located on the slopes facing South / Southwest (area known as Basigo de Bakio, traditionally used for growing grapes): Torrezar, Artatxuberri, Iturriaga are vineyards with clay soils, variegated marl and plaster and Irimingorrieta, a youngest vineyard with sandstone and shale soil.
ELABORATION
Destemming and cryomaceration of selected grapes. Made from flower must. Individual elaboration by vineyards. Controlled fermentation at 16º C for 3 weeks with selected autochthonous yeasts in our vineyards. Aging on lees in tank. Stainless steel tanks. Cold stabilization. Vinification separated by plots. The use of the own yeasts identified in our vineyards and the knowledge of the soils enhances the varietal character, achieving a more complex and personalized txakoli.
TASTING NOTES
Straw yellow color with green iridescence. On the nose, it has a subtle and complex varietal aroma: apple, citrus, herbaceous tonos like fennel and minerality. On the palate it is broad, glyceric and very round. Long and with a bitter finish –very characteristic of the variety. The fruitiness of the wine persists in the mouth. Serving temperature: 8-10ºC
PAIRING
Ideal companion for seafood, crustaceans and blue fish, as well as grilled fish, rice and white meat.
Alcoholic degree: 12.7% vol.
Total tartaric acidity: 7.30 g / l.
Reducing sugars: 3.3 g / l.
