Txakoli Blai Rosé
Our way of conceiving wines is based on deep knowledge of the microbiological process and physical-chemical changes that occur in the production of our txakoli. The reception of grapes in perfect sanitary condition and exact point of maturity, and the exquisite hygiene of equipment and materials, is our first requirement to start processing our product. Even not having the most avant-garde technical equipment, the continuous care and control of the processes makes the result as required. Cold maceration, aging on lees or progressive decantation are some of our most representative working methods.
Intuition does the rest so that Blai txakolina achieves an extraordinary level of quality.
Blai is a winery that works directly with the wine growers of the area. This allows us to enjoy a wide selection of vineyards that offer the diversity of grapes appropriate to our style of production. The forcefulness of inland Gipuzkoa blends with the subtlety and freshness of the coastal areas. Oñati vineyards with gentle slopes facing south and vineyards on slopes descending towards the sea in the heart of Getaria, allow us coupages that provide our txakolis with the complexity of nuances that we require. Hondarrabi Zuri is the variety that provides the basic character of our txakoli.
ELABORATION
Made with grapes from Getaria vineyards (next to the sea) 30% Hondarrabi Zuri and 70% Hondarribi Beltza with an early ripening point to accentuate its freshness. Worked under strict temperature control, it is aged on its lees for 3 months before cleaning and bottling.
TASTING NOTE
It presents a txakoli with aromas of white fruit, hints of red fruit and a touch of herbaceous, with firm acidity, light astringency and fine bubbles.
