From the heart of the Urdaibai biosphere reserve, in Muxika (Bizkaia), Jose Angel offers us txakolis made in silence, which only make noise when they enter our mouth. A place 200m above sea level, on the slopes of Mount Oiz and with views to the island of Izaro in Mundaka.
The vineyard is managed on a double guyot trellis with Integrated Production techniques. Manual harvest in boxes and destemming, with subsequent cold maceration. Fermentation in stainless steel tanks at a controlled temperature of 15º. For 8 months it rests on its fine lees and after a light clarification, the amicrobic filtration is carried out at 0.45.
