Txakoli Astobiza Rosé
Framing within the Protected Designation of Origin Txakoli de Álava, the uniqueness of the cultivated vineyard results in wines of marked personality and excellent quality. Astobiza wines are made exclusively with grapes produced in this vineyard, with a closed exploitation development, that is, with a winery only dimensioned to produce the vintage produced in its own vineyard. Therefore, its production is considered as Payment or Farm Wines, where the characteristics of the viticultural ecosystem are reflected in the wines produced.
VINEYARD
Located in the small rural municipality of Oquendo, in the province of Álava, about 30 minutes from Bilbao, on a 10-hectare farm divided into 7 micro-plots. Located 250 meters above sea level, it is protected by mountains and far from the bottom of the valley, thus protecting itself from the fog and winter frosts, so damaging. 100% of our grapes are indigenous varieties, mainly Hondarrabi Zuri, some Hondarrabi Zuri Zerratie (Petit Corbu) and a small plot of Izkiriota known as Gros Manseng.
ELABORATION
Selection by parcels, harvest by hand in small boxes, second selection on the table, destemming and cold maceration prior to soft pressing, static racking of the must, fermentation at controlled temperature, inert, stabilized and microfiltered process.
TASTING NOTES
Floral nose, notes of white flowers and strawberries. On the palate it is citric, fresh, with typical varietal notes, mineral touches and salinity, balanced and intense. Long and persistent aromatic finish.
SERVICE AND PAIRING
Serve cold, in a glass, at about 6º-8º. Pairings with undercooked and raw blue fish, bonito, salmon, crayfish and sautéed prawns, Mexican and Thai cuisine.
