Txakoli Astobiza Late Harvest
Framing within the Txakoli de Álava Protected Designation of Origin, the uniqueness of the cultivated vineyard and the production technology used achieve wines of marked personality and excellent quality. Astobiza wines are made exclusively with grapes produced in this vineyard, with a closed exploitation development, that is, with a winery only dimensioned to produce the vintage produced in its own vineyard. Therefore, its production is considered as Payment or Farm Wines, where the characteristics of the viticultural ecosystem are reflected in the wines produced.
VINEYARD
Located in the small rural municipality of Oquendo, in the province of Álava, about 30 minutes from Bilbao, on a 10-hectare farm divided into 7 micro-plots. Located 250 meters above sea level, it is protected by mountains and far from the bottom of the valley, thus protecting itself from the fog and winter frosts, so damaging. 100% of our grapes are indigenous varieties, mainly Hondarrabi Zuri, some Hondarrabi Zuri Zerratie (Petit Corbu) and a small plot of Izkiriota known as Gros Manseng.
ELABORATION
Only exceptionally sunny Autumns allow a micro-plot of vineyard on the Astobiza estate to mature and harvest. With this demanding late harvest of intensely golden beans and carefully selected by hand, we get this unique sweet wine with a marked Atlantic character.
We also carry out a second selection at the table, and cold maceration prior to gentle pressing, fermentation at controlled temperature, aging with lees and aging in French oak barrels, inert, stabilized and microfiltered process.
TASTING NOTES
It shows sharp and intense citrus and honeyed aromas, assembled with a perfect balance in the mouth, and a long finish, full of perfumes and sensations evocative of its place of origin. It manages to balance the acidity of the txakoli with the friendly sweetness of the late harvest.
SERVICE AND PAIRING
Serve cold, in a glass, at about 6-8ºC. It is ideal to combine with powerful products with their own personality: Acorn-fed Iberico Ham, Foie Micuit, Goat Cheese.
