Txakoli Apardune Brut Nature
Doniene Gorrondona Txakolina currently has 15 hectares. in production, preferably owned. All the vineyards are located on the south-facing slopes of the Bakio Valley. Bakio, due to its geographical location, on the Cantabrian coast but protected by the mountains from the northwest winds, has historically been a vineyard growing area. The soil, sandier in the higher areas and more clayey in the lower parts of the valley, has a diversity to which the autochthonous varieties are adapted.
The Apardune Brut Nature txakoli has been made with 75% Hondarrabi zuri and 25% Munemahatsa from vineyards in the Artatxu region in Bakio. This wine has been aged on lees in tank, prior to the draft, in order to reinforce the roundness and finesse in the mouth and thus assemble the future bubble in its structure.
Made by the traditional method of second fermentation in the bottle. The bottles have been stacked in stacks and in the dark for aging and refining for a minimum of 20 months. During this time, in addition to the second fermentation or foam taking, the wine has been acquiring structure and finesse through the natural decomposition of the yeasts that acted in the first phase. By placing it on a desk, the solid particles are deposited at the tip of the bottle and finally disgorged with the disgorging, the final cork is placed and the finished product is labeled. All the work is done by hand. It is called Brut Nature since the sparkling wine from another bottle has been used as expedition liquor. ”0 dosage”
Straw yellow in color with greenish reflections, its bubbles are fine and constant in the glass. On the nose, its subtlety stands out, reminiscent of apple, fennel, along with aromas from fermentation in the bottle, hazelnut and walnut. On the palate it is slightly acidic, balanced, elegant and creamy with a finish of almond notes. It stands out above all for its originality.
