Integrated Production. Minimum use of phytosanitary products guaranteed. Our philosophy is to bet on sustainable agriculture, being respectful of our legacy. We work our wines with grapes from plots worked and cultivated with viticulture of integrated production.
This plot is harvested with a careful selection at its optimum moment of maturity. We prepare a txakoli with traditional mastery and the latest technology. Aitako in particular is fermented at a low temperature (14oC) to obtain greater aromatic intensity. It rests for 12 months in tank on its own lees and once bottled, it matures for 12 months in the bottle.
In the glass it has a bright and clean golden color. There is a presence of very fine bubbles due to the cold production process. Complex aroma and intense varietal aroma of apple and pineapple. Citrus and fresh notes with a mineral background.
Mouth. Despite its aging time, it maintains its citrus freshness. Body and long persistence, with a dry finish. Aging on its own lees provides volume, smoothness and balance on the palate. Aitako txakolina is a complex and sophisticated wine. It perfectly represents the potential of the local Hondarrabi Zuri variety. A unique txakoli.
SERVICE AND PAIRING
It is a wine with varied aromatic registers, the kind that ask you to smell it and smell it, and that ends up catching you hopelessly. It invites you to enjoy it on a special occasion, with good dishes and unbeatable company. We recommend serving it at a temperature of 8º to 10ºC. Ideal for white meat, fish, seafood and rice.
