KATXI extra Brut
Bodega Katxiña was founded in 2014 to make the Txakoli that the family has been making for generations.
The Katxiña winery represents the latest creation of the Zendoia family, founded in 2014 to bring Katxiña txakoli to the public. Located in the coastal town of Orio where the house-made txakoli accompanies some of the best dishes of traditional Basque cuisine, with special attention to seafood. The txakoli from this winery provides a touch of sparkle to all the meals served in the family restaurant, a local wine that combines perfectly with the magnificent grilled fish dishes they offer.
VINEYARD
The Katxiña txakoli is made with the Hondarrabi Zuri grape variety, harvested in the 8 hectares that surround the winery, all facing south, planted on a slope that ends at the Oria River. The production is carried out using the traditional methods of making txakolis with D.O. Getariako Txakolina since the Middle Ages, combining it with the most innovative production equipment.
ELABORATION
During the harvest, they manually select the clusters that are best suited for the production of Katxi Extra Brut. The first fermentation is carried out in stainless steel tanks where they keep the wine resting for seven months. From that date they pass it to the bottle where the second fermentation takes place. It is kept in the bottle for at least eighteen months and from there it is disgorged and put into operation for the marketing of this exquisite Extra Brut.
TASTING NOTES
Silky and fine touch that surprises in the mouth. Light, where you can perceive the fruity flavor of the grape along with the characteristic freshness of the region.
