Hiruzta Basque Brut Nature
This original sparkling wine comes from indigenous grapes of the Hondarrabi Zuri variety, grown in the property’s vineyard and made by the “Traditional Method” bottle by bottle in the same winery.
VINEYARD
Own 14 hectares. located around the winery on the slopes of Mount Jaizkibel. Its orientation towards noon protects it from the wind and humidity of the nearby Cantabrian Sea, allowing you to enjoy excellent sunshine. Vineyard grown on a trellis with the double Guyot pruning system. Plantation frame: 2.60 x 1.20 (3,200 vines / hectare). Soil with a lot of bedrock and clay loam.
ELABORATION
Starting from a white base wine of the Hondarrabi Zuri variety, grown in the property’s vineyards and made in its own winery, this sparkling wine was made by the “Traditional Method” bottle by bottle. The second long-term fermentation was carried out at low temperature, followed by aging on the lees in the 14-month bottles and later decanting in desks with manual stirring, these being also expelled in a traditional way. Expedition liqueur is not used, so it is a natural sparkling wine, without any addition of sugar in the slaughter (Brut Nature).
TASTING NOTES
Clean and bright. Pale yellow color with greenish reflections. Detachment of fine-sized bubbles and abundant long-lasting rosaries. Sustained foam with a very fine and creamy texture, covering a large part of the wine’s surface: crown and lace. Intense aromas of white fruits (pear and apple) appear on the nose, with a background of fennel integrated with fine creamy and pastry touches, all of them enhanced by the release of natural carbon dioxide. In the mouth it is very balanced and fresh, with a pleasant spicy sensation produced by the carbonic gas and a highly integrated acidity. Pleasant mid palate with a lot of body, structure and creamy, with notes of compote fruit in the aftertaste. Long and aromatic finish.
GASTRONOMY
Appetizers, hors d’oeuvres, under-cured cheeses, seafood, fish, rice, legumes, white meat and desserts. Serving temperature: 5o to 8oC. Store in a cool place, in the absence of lighting and in a place free from foreign odors. Good evolution in the bottle for the next two years and always with the bottle upright.
