In the past, the txakoli was produced in farmhouses or country houses in an artisanal way. It was traded, at least since the beginning of the 16th century, when the first historical document in which reference is made to txakoli as such dates. Around the seventeenth century there are already references in Bizkaia about txakoli. At the beginning of the 19th century, if not before, tithes of txakoli were paid from Bizkaia to the Count of Montijo, giving rise to various lawsuits. In the 19th century there are also news of the txakoli trade between Bizkaia and towns in Cantabria such as Colindres. The production is mainly white wine, although in smaller quantities rosés and reds are also produced. The color of white wine is pale yellow; on the nose it denotes intense aromas of herbs and flowers; in the mouth it is fresh, slightly acidic and easy to drink. It has to be served fresh.
